Make the cinnamon sugar coating: Combine sugar and ground cinnamon in a shallow dish or large zip-top plastic bag.

Make the churro dough: Line two baking sheets with parchment paper. Combine butter, salt, and 1 cup water in a medium pot. Cook over medium-high heat, stirring occasionally, until butter melts and mixture comes to a boil, 1 to ⏱️ 2 minutes. Immediately stir in flour all at once, and cook, stirring constantly, until mixture forms a cohesive mass and follows the spoon around the pan, ⏱️ 30 seconds to ⏱️ 1 minute. Transfer to a bowl and let cool, stirring occasionally to release steam, ⏱️ 10 minutes.

Add cinnamon to dough and beat with an electric mixer on low speed until combined. Slowly beat in eggs, a little at a time, until mixture is smooth. Once eggs are incorporated, increase mixer speed to medium and beat for ⏱️ 1 minute. Transfer dough to a piping bag fitted with a ⅝-inch star tip. Pipe dough into 3-inch-long candy cane shapes on prepared baking sheets. Freeze ⏱️ 20 minutes.

Pour oil in a deep straight-sided skillet or Dutch oven to a depth of 1½ inches. Heat to 375°F with a deep-fry thermometer attached. Peel churros off parchment and fry, in batches, stirring often, until light golden brown and cooked through, 3 to ⏱️ 4 minutes. Transfer to a paper towel-lined baking sheet. While churros are still warm, toss a few at a time in cinnamon sugar mixture until coated. Serve warm.
