Peel the ginger and trim any small knobs off the side of the roots. Thinly slice the ginger lengthwise into the longest possible strips.

In a medium saucepan over high heat, bring 4 cups water and the ginger to boil. Reduce heat to medium, cover, and simmer ⏱️ 30 minutes.

Using a slotted spoon or spider strainer, remove ginger and transfer to a bowl. Add 2 cups cooking water to a measuring cup, then discard the rest.

Return the ginger and the reserved 2 cups cooking water to the saucepan. Stir in 2 cups sugar. Return to a boil, and cook uncovered until the ginger is soft, pliable, and golden brown and most of the liquid has evaporated, about 35 to ⏱️ 40 minutes.

Set a cooling rack over a rimmed baking sheet lined with parchment paper. Using a slotted spoon or spider strainer, transfer the ginger to the rack in a single layer so no pieces are touching. Reserve the remaining cooking liquid, ginger-flavored simple syrup, if desired (see FAQs for usage ideas).

Cool ⏱️ 30 minutes. While the ginger is still sticky, toss in the remaining 1/2 cup sugar until evenly coated. Return to the rack and dry overnight, then store in an airtight container.
