Crispy bacon hardly ever needs dressing up, but this candied bacon recipe, with its caramelized sweet and spicy coating, is a welcome exception to the rule.

Preheat the oven to 350°F. Line a large baking sheet with foil.

In a shallow bowl, stir together the brown sugar, pepper, and cayenne. Working with one slice of bacon at a time, coat both sides in the brown sugar mixture and arrange in a single layer on the prepared baking sheet.

Bake until the bacon is rendered and browned on the edges, 25 to ⏱️ 30 minutes, giving the pan a half turn, half way through cooking. Transfer the bacon to a wire rack to cool completely, about ⏱️ 20 minutes. The bacon will crisp as it cools.
