This delicious, simple loaf is the perfect way to use up those overripe bananas lurking in the fruit bowl. It's made with nutrient powerhouses like cacao nibs, one of the best natural sources of magnesium, and walnuts which are a brilliant source of omega-3 and healthy fats.

Preheat the oven to 140°C fan / 290°F. Line a 1kg / 2 lb loaf tin with baking parchment.

Place the bananas, dates, olive oil and yoghurt in a food processor. Blitz for 2—⏱️ 3 minutes until smooth.

Sift the flour and cacao into a large bowl. Add the flaxseeds, salt, walnuts and cacao nibs; set aside a few walnuts and cacao nibs to decorate. Mix until combined.

Add the dry ingredients to the food processor and pulse briefly, about 2—⏱️ 3 seconds, until just incorporated.

Pour the batter into the tin – it will be quite thick – then scatter over the remaining walnuts and cacao nibs. Bake for 50—⏱️ 60 minutes, until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool on a wire rack before serving.
