Preheat the oven to 160°C fan / 320°F. Line a large baking tray with baking parchment.

Place the buckwheat, oats, coconut flakes, sesame seeds, sunflower seeds, hazelnuts, almonds, cacao powder and salt (if using) into a large bowl and mix well to combine.

Melt the coconut oil in a small saucepan over low heat, or in a heatproof bowl in the microwave. Pour over the dry ingredients, add the maple syrup and stir until everything is evenly coated.

Transfer the mixture to the lined baking tray and spread into an even layer. Bake for 25–⏱️ 30 minutes, stirring halfway through, until nutty and golden.

Remove from the oven and leave to cool completely before breaking into clusters. Store in an airtight container for up to 2 weeks.
