Start cooking the pasta as directed on the package.

Meanwhile, melt the butter in a large saucepan over medium heat and cook until it starts to turn a light golden brown, about ⏱️ 2 minutes.

Add the milk, bring to a simmer, mixing, and cook until it thickens, about ⏱️ 5 minutes.

Reduce the heat, add the cheese and let it melt into the sauce.

Mix in the nutmeg, mustard, and butternut squash puree before seasoning with salt and pepper to taste.
