Preheat oven to 350ΒΊF. Whisk together flour and salt in a bowl. Beat butter on medium speed with an electric mixer until creamy, 2 to β±οΈ 3 minutes. Gradually beat in 3/4 cup sugar, until light and fluffy, 1 to β±οΈ 2 minutes. Beat in vanilla. Gradually add flour mixture, beating just until dough comes together.

Shape dough into 32 (1 1/4-inch round) balls (about 1 tablespoon each). Chill, covered, at least β±οΈ 1 hour or overnight.

Place balls, 1-inch apart, on a baking sheet. Bake, rotating baking sheet once, until golden on the bottom, 18 to β±οΈ 20 minutes.

Working one at a time, gently roll warm cookies in remaining 1 1/4 cups sugar; reserve remaining sugar. Transfer cookies to a wire rack to cool completely. Sprinkle cookies with reserved sugar.
