Butter Bean & Sweetcorn Falafel
These baked sweetcorn falafels are amazing! The sweetcorn gives the falafel a delicious sweet taste, while the chickpea flour makes them so fluffy. They're nice served hot out of the oven, with big dollops of hummus and some fresh rocket or broccoli on the side.

📝 Preparation Steps

Preheat oven to 200C (400F), fan setting.

Drain and wash the butter beans and sweet corn and place them into a food processor with the rest of the ingredients.

Pulse until it reaches a smooth paste. Leave to set for ⏱️ 5-10 minutes in the fridge.

Using a large spoon or ice cream scoop, scoop balls of the mixture onto a baking tray.

Bake in the oven for ⏱️ 35-40 minutes, until golden and cooked through – a knife inserted should come out clean, if not place back in the oven for 5 more minutes.
