Preheat the oven to 425 degrees F.

Add the potatoes to a large pot, fill with water; then bring to a boil over high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer for about ⏱️ 15-20 minutes or until they are tender when pierced with a fork.

Drain the potatoes thoroughly; then transfer your potatoes into a mixing bowl. Add the melted butter, fresh chopped parsley, salt and pepper. Toss to coat; then transfer onto a baking sheet.
