Heat the oil in a large pan/skillet, add the chicken, onions, carrots and celery and cook, breaking the chicken apart as it cooks, until the chicken is cooked through and the vegetables are tender, about ⏱️ 10-15 minutes.

Add the garlic and cook until fragrant, about a minute.
