Buffalo Cauliflower Sandwiches
Meat-eaters and vegetarians alike will love this Buffalo cauliflower sandwiches recipe! The cauliflower is fried and drenched in sauce before it goes on a bun.

Cut the cauliflower into four Β½-inch-thick steaks, keeping the core intact. Reserve the remaining cauliflower for another use.

Fill a large deep skillet halfway with water and bring to a boil. Add the cauliflower and cook until fork-tender, about β±οΈ 5 minutes. Drain and let cool for β±οΈ 15 minutes. Wipe the skillet dry.

In a shallow bowl, whisk together the flour, paprika, garlic powder, and salt. In a separate shallow bowl, lightly beat the eggs. Pour the Buffalo sauce into a third shallow bowl. Coat each piece of cauliflower in the flour mixture, then dip in the eggs, letting the excess drip off, then dip again in the flour mixture to coat completely.

Heat ΒΌ inch of vegetable oil in the same skillet over medium-high heat until shimmering. Add 2 cauliflower steaks and cook until golden, about β±οΈ 2 minutes per side.

Dip the fried cauliflower in the Buffalo sauce, turning to coat. Place the finished cauliflower on a platter and repeat with the remaining 2 steaks.

Spread blue cheese dressing on the cut sides of the buns. Place a fried cauliflower steak on the bottom buns, top with lettuce and tomato, and close the sandwiches. Serve with carrot and celery sticks.
