Buckwheat Crêpes With Pan-fried Mushrooms
These are the ultimate savoury pancakes and they couldn't be more simple. We love to serve them with a dollop of cashew cream — it goes so well with the richness of the mushrooms.

To make the mushroom topping, simply place a pan over medium heat and add a drizzle of olive oil. Once warm, add the garlic and onion and cook for 5–⏱️ 10 minutes until soft.

Once soft, add the mushrooms and cook for 5–⏱️ 10 minutes until golden. Stir through the spinach and cook for a couple of minutes until wilted.

To make the crêpes, stir all of the ingredients together to form a smooth batter.

Warm some olive oil in a large pan over medium–high heat and add a few large spoonfuls of the batter into the pan; tilt the pan to spread the mixture to the edges. We usually cook about ¼ of the mixture at a time but this will depend on the size of your pan.

Cook on each side for ⏱️ 3 minutes until golden and delicious.

Repeat this process with the rest of the batter to make all of your crêpes, it usually makes around 3 depending on the size you’re making.

Once ready to serve, pile the crêpes high with a large dollop of cashew cream and some of the mushroom mixture.
