Buckwheat & Coconut Granola
Buckwheat is a gluten-free pseudo-grain that is a rich source of fibre, magnesium and antioxidants – and actually not related to wheat. We love the distinctive crunch of buckwheat groats in granola but oats are a great swap if that’s what you have handy. We have used brown rice syrup in our granola. It has a lower GI index than other sweeteners, but if you’re in a pinch, maple syrup is a great substitute. You can also improvise with whatever dry ingredients you have in the cupboard– swap out the nuts, buckwheat, or coconut for your favourite flavours. A delicate sprinkle of flaky sea salt adds a gorgeous savoury note to this granola, but you can omit that if you are conscious of your sodium intake. This recipe makes more than you will likely eat in a week but stored in an airtight container this granola keeps well for up to 2 weeks.

Preheat oven to 130°C fan / 150°C. Line a large rimmed baking tray with parchment paper.

Place the oil and brown rice syrup in a small saucepan over medium heat and stir until the mixture has loosened. (If you try to mix the liquid into the granola without heating it first it will not disperse evenly).

Place the buckwheat groats, porridge oats, coconut flakes and walnuts in a large bowl. Pour over the oil-brown rice syrup mixture and stir until well coated.

Tip the mixture onto the prepared baking tray/ sheet. Bake, removing from the oven to stir at ⏱️ 15 minute intervals to ensure even cooking, until golden brown and crunchy, about ⏱️ 45 minutes. Place baking tray / sheet on a wire rack to cool. If desired, sprinkle a small amount of flaky sea salt over the granola while it is still warm. Once cooled, stir through the pumpkin seeds, sunflower seeds and goji berries.
