This is the perfect dish to use up any leftover vegetables - especially potatoes and carrots. We've made ours pretty simple using only a handful of ingredients, but you can mix through any leftover vegetables you have - sprouts, cabbage and parsnips all taste delicious in it too.

Peel and roughly chop the potatoes. Place a pan of salted water over a medium heat and bring to the boil. Once boiling, add the potatoes and cook for ⏱️ 25-30 minutes until soft. Once cooked, drain and mash with a fork - you want it to have a mashed consistency, but still a little chunky. If you’re using ready cooked potatoes, simply just mash them.

Place a pan over a medium heat and add a drizzle of olive oil. Add the onions and garlic and cook for ⏱️ 5-10 minutes until soft.

Once cooked, mix the onions and garlic into the mashed potatoes, along with the grated carrot, coconut oil, pesto and any other veg you may be using (just make sure it’s either mashed, grated or finely chopped).

Place the pan back onto a medium heat and add a drizzle of olive oil. Once hot, add the mashed potato mixture and smooth over using a spoon until it covers the whole pan. Cook for ⏱️ 8-10 minutes until the bottom is cooked.

Once the bottom is cooked, simply flip over (you may want to use a large plate to help you with this) and cook for another ⏱️ 8-10 minutes on the other side until cooked through.
