We think broccoli is a very underrated pizza topping. Green and crunchy, it perfectly compliments the hot, doughy crust and luscious cashew cream in this recipe. The key is to chop it into very small florets to ensure even crisping and caramelisation.

Preheat the oven to 220°C fan / 240°C.

Lightly oil a baking tray. Spread the dough into a rectangle directly on the tray using your fingertips.

Place the chopped broccoli florets in a large bowl, toss with olive oil and season lightly with salt.

Spread the dough with ⅓ of the tomato sauce. Top with the broccoli. Bake, until the crust is golden brown and the broccoli is turning dark brown in spots, about ⏱️ 15 minutes. Transfer to a cutting board using a spatula, drizzle with cashew cream and top with fresh basil and chili flakes, if desired. Slice.
