Preheat your oven to 350 degrees Fahrenheit. Grab a 3 or 4 quart casserole dish and spray it with non stick cooking spray.

Pour 2 cups of the chicken broth into a saucepan and bring it to a boil. Add the uncooked brown rice, stir, cover, and reduce heat to low. Simmer for about ⏱️ 30 minutes until liquid is absorbed. Remove from heat and set aside.

Heat the olive oil in a medium saucepan over medium heat. Add chopped mushrooms and saute for about ⏱️ 3 minutes until golden. Pour in 2 1/2 cups of broth and 1/2 cup of milk. Stir and bring to a slow boil, watching closely.

In a large mixing bowl, combine the cooked rice, about 3 cups of freshly made soup, chopped onions, fresh broccoli florets, and 1 cup of shredded cheese. Gently mix until well coated.
