Preheat your oven to 425 degrees Fahrenheit. Lightly grease a 9 by 13 inch baking dish. Spread the broccoli florets on a sheet pan, drizzle with olive oil, toss, and sprinkle generously with salt and pepper.

In a medium saucepan, melt 4 tablespoons of unsalted butter over medium heat. Stir in the flour and whisk until smooth and bubbly, about ⏱️ 1 minute.

Slowly drizzle in the warm milk while continuously whisking until smooth and thickened. Reduce heat to low.

Stir in the garlic powder, cayenne pepper, salt, and pepper to taste. Add the shredded cheddar cheese and stir until completely melted and smooth. Remove from heat.

Crush the Ritz crackers in a ziplock bag into smaller pieces. Pour into a small bowl, drizzle with 1/4 cup melted butter, and stir until coated.
