Broccoli, Brown Rice & Edamame Salad
This is the perfect speedy dinner, packed full of flavour and fresh veggies. We love to roast broccoli and courgette, but you can use whatever vegetables you have at home.

Preheat the oven to 200C (390F), fan setting.

Place the courgette and broccoli in a baking tray and drizzle with olive oil and a large pinch of salt. Mix well and cook for ⏱️ 15 minutes. Once cooked, remove from the oven.

Cook the rice according to the instructions on the pack, adding the edamame beans in the last ⏱️ 5-10 minutes to cook through. Once cooked, mix together with the vegetables.

Add the roasted almonds, lime juice, spring onions, tamari, tahini, sesame oil and another pinch of salt and mix well.

Spoon into two bowls and top with a pinch of chilli flakes.
