Broccoli and Sausage Calzone
While calzones can be made simple or more complex, Dan opts for an easy yet flavorful take on the baked, folded pizza that incorporates three different homemade elements—dough, sausage, and a cheese mixture— for a dish that is equal parts satisfying and comforting.

Dough

Attach the flat beater attachment to the KitchenAid® Stand Mixer. In the Stand Mixer bowl, mix together 1 ¼ cup warm water (110-110 degrees), 2 packets of yeast and 1 tablespoon sugar until dissolved. Cover and let stand for ⏱️ 5 minutes. Add 3 ½ cups of flour, 1 teaspoon kosher salt and 1/4 cup olive oil to the bowl and mix to combine until a dough forms, about ⏱️ 3-4 minutes.

Swap your attachment to the dough hook and knead your dough, on the lowest speed, for ⏱️ 5 minutes. Dough should be smooth and elastic. Grab a large bowl and add 1 tablespoon of olive oil. Use your hands to grease the surface of the bowl. Place the ball of kneaded dough into the bowl, flipping the dough around to cover it in grease as well. Place a towel over the bowl and leave in a warm, draft free spot for about ⏱️ 60-90 minutes, or until it doubles in size.

Sausage

While the dough is rising, let’s make the sausage. Add 2 lbs ground pork, 6 grated or minced garlic cloves, 2 tablespoons red wine vinegar, 1 teaspoon chopped or ground fennel seeds, 2 teaspoon dried parsley, 2 teaspoon dried oregano, 1 teaspoon paprika, 2 teaspoons kosher, 1 teaspoon ground black pepper, 1 teaspoon red pepper flakes (optional) into the bowl of the Stand Mixer fitted with the flat beater attachment. Mix on low speed until all ingredients are evenly incorporated.

Place a large frying pan on your stove over medium heat. Allow it to get hot and then add the sausage mixture to the pan in golf ball sized chunks. Let these chunks brown all over and then break them down into smaller pieces, cooking the sausage through. Set aside.

Broccoli Mix

Next up, broccoli. Cut broccoli into large chunks. Be sure to cut thick stems (the part without the florets) in half, lengthwise. In a salted pot of boiling water, place your chunks of broccoli. Boil for ⏱️ 10 minutes or until the broccoli is knife-tender.

Remove broccoli from water and place into the bowl of the Stand Mixer fitted with the flat beater attachment. Mix your broccoli on low speed, letting it naturally break down into small pieces. Stop when you have reached your desired consistency. I prefer mine a little chunky. Place broccoli in a bowl and set aside.

Cheese Mix

Now we make the cheese mixture. Add one 32 oz container ricotta cheese, 1 cup grated parmesan cheese, 8 oz shredded mozzarella cheese, ⅓ cup chopped fresh basil, 1 teaspoon kosher salt, 1 teaspoon ground black pepper and red pepper flakes (to taste) to the bowl of a stand mixer fitted with the flat beater. Mix on low speed until all ingredients are evenly incorporated. Set aside.

Prepare the Calzone

Preheat the oven to 475 degrees and line 2 ½ sheet pans with parchment paper.

Take your risen dough that has doubled in size and punch it back down to its previous size. Cut the dough ball into 4 even pieces.

On a floured surface, roll each ball out into an approximately 10 inch circle that is ¼ inch thick. Place your fillings on ½ of the circle of dough. I layer cheese first, then sausage, then broccoli. Fold the other half of the dough on top of fillings and roll the edges over to seal the dough into a pocket. You can do this filling step right on your sheet pans for ease. Brush each of your calzones with olive oil on top and cut 3 small 1” slits into the top of the dough.

Bake your calzones for ⏱️ 15 minutes, or until they are as toasted as you like.

Quick Marinara Sauce

While your calzones are baking, make a quick marinara sauce to serve with your calzones. In a small sauce pot, add 3 tablespoons olive oil, 5 cloves of garlic, peeled and smashed, and 1 diced small yellow onion. Sauté until golden. Then add 1 28oz can of crushed tomatoes, ¼ cup chopped fresh basil and salt, pepper and red pepper flakes to taste. Let simmer until warmed through.
