Make brandied cherries: Combine cherries, sugar, and brandy in a bowl. Refrigerate at least ⏱️ 12 hours and up to 2 days. Drain.

Make ice cream: Combine cream, milk, sugar, and salt in a medium saucepan. Cook, over low heat, stirring occasionally, until sugar is dissolved, 4 to ⏱️ 6 minutes. Whisk together 1/3 cup cream mixture and egg yolks in a bowl until fully combined. Slowly whisk yolk mixture back into saucepan. Cook over medium-low heat, stirring constantly, just until mixture starts to thicken and reaches 170°F on an instant-read thermometer, 8 to ⏱️ 10 minutes. Transfer to a bowl or storage container and cool ⏱️ 30 minutes. Once cooled, chill, covered, at least ⏱️ 4 hours and up to ⏱️ 24 hours.

Stir brandied cherries into cream mixture. Churn per the ice-cream maker’s instructions, adding chocolate during the last minute of churning. Transfer to a bowl or storage container and freeze until firm, at least ⏱️ 2 hours.
