Preheat the oven to 375°F.

Cook the bacon in a large ovenproof skillet over medium heat until browned and crispy, 5 to ⏱️ 7 minutes. Remove to a paper towel-lined plate. Leave the drippings in the skillet.

Sprinkle the cabbage with 2 teaspoons salt and 1 teaspoon pepper. Working in two batches, sear the cabbage wedges in the bacon drippings over medium heat until lightly browned on both sides, about ⏱️ 5 minutes per batch. If the pan becomes dry, add 2 tablespoons olive oil between batches. Remove to a plate.

Add 1 tablespoon olive oil and the onion to the skillet and cook until softened, 3 to ⏱️ 5 minutes. Stir in the tomato paste, garlic, chipotle peppers, adobo sauce, and the remaining ½ teaspoon salt and ¼ teaspoon pepper. Cook until fragrant, ⏱️ 1 minute. Whisk in the chicken broth, Worcestershire sauce, and brown sugar and bring to a boil.

Remove the skillet from the heat and add the cabbage wedges. Bake until the cabbage is tender and caramelized, 45 to ⏱️ 55 minutes, carefully flipping the wedges halfway through.

Drizzle the cabbage with the vinegar, sprinkle with the chives and bacon, and serve with the sour cream.
