For the Topping

Add the pistachios and coconut flakes to a mini food processor; then pulse until fine. Add the mixture to a small bowl as this will be the topping.

For the Energy Bites

To the same food processor, add the remaining pistachios, coconut flakes, blueberries, dates and coconut oil. Pulse until fine and the mixture is well blended.

Using clean hands, shape 12 balls and roll each one in the reserved pistachio and coconut mixture. Store in an airtight container in the refrigerator for up to one week.
