Blueberry Pancakes
These blueberry pancakes are so simple to make and delicious with the fruity blueberries running through the mix. The self-raising flour makes them so big and airy, but you can also replace this with any plain flour.

Stir all of the pancake ingredients (apart from the blueberries) together to form a smooth, thick batter. Once mixed, add the blueberries and mix again. Leave mixture for 5–⏱️ 10 minutes to thicken.

To make the pancakes, warm a tablespoon of coconut oil in a pan over medium heat.

Once the pan is hot and the oil has melted, spoon a large tablespoon of pancake batter into the pan, using a wooden spoon to spread out the mix.

Cook on one side for 3–⏱️ 4 minutes until golden, before turning and cooking the other side for 2–⏱️ 3 minutes until cooked through.

Remove and repeat until all of the batter is finished.
