Blarney Fries
Blarney Fries are my version of an Irish Poutine made with steak cut french fries, Irish Dubliner cheese, shaved roast beef; then topped with brown gravy.

For the Blarney Fries

Preheat oven to 425 degrees F.

Heat the oil in a large frying pan and cook the potatoes until they are crispy and golden brown. (You can also bake them in the oven if you prefer). Drain the fries on paper towels to remove any excess oil; then place them on a baking sheet.

Top the fries with the shredded cheese and roast beef; then bake for ⏱️ 10 minutes until the cheese has melted.

Remove the fries from the oven, and drizzle the gravy on top. Garnish with the chopped scallions.

For the Brown Gravy

Melt the butter in a small saucepan; then whisk in the flour forming a roux.

Add the beef broth and gravy master and whisk until the gravy has thickened (approximately ⏱️ 5 minutes)
