Pat chicken dry and arrange on a baking sheet or work surface. Lightly brush both sides with olive oil. Sprinkle Cajun seasoning generously over both sides, pressing gently to adhere.

Heat a large cast iron skillet over high heat for 3 to ⏱️ 5 minutes, until very hot. Add chicken in a single layer. Cook without moving until a dark crust forms, about 3 to ⏱️ 4 minutes.

Flip and cook until the internal temperature reaches 165 degrees, about 3 to ⏱️ 5 minutes more. Transfer to a cutting board and rest ⏱️ 5 minutes before slicing.
