Blackberry & Apple Upside-Down Cake

Grease and line the bottom of a deep 20cm / 8″ round loose-bottomed tin with baking parchment. Preheat the oven to 160°C fan / 350°F.

Put the flour, coconut sugar, bicarbonate of soda and a pinch of salt in a large bowl and toss to combine. Gradually pour in the olive oil, vanilla paste, vinegar, orange zest and soya milk, mixing to form a thin batter. Then fold in the apple cubes and chopped blackberries.

Arrange the halved blackberries (cut side facing up) and the apple slices to fill the bottom of the tin. Top with the cake batter and tap lightly to evenly cover the fruit.

Bake for 55–⏱️ 60 minutes, until a skewer inserted comes out clean. Leave in the tin for ⏱️ 30 minutes to set slightly and then remove, flipping onto a plate and removing the baking parchment.

Serve warm with vegan custard, or leave to cool completely before slicing and serving with a dollop of coconut yoghurt.
