Cook bacon in a 12-inch cast-iron skillet over medium heat until crisp, 8 to ⏱️ 10 minutes. Remove bacon to a paper towel-lined plate with a slotted spoon; reserve 3 tablespoons bacon drippings in skillet.

Add onion, poblano, and garlic to reserved drippings and cook until tender, 5 to ⏱️ 7 minutes. Stir in chili powder, oregano, cumin, and 1 teaspoon pepper and cook until fragrant, ⏱️ 1 minute. Add beans and stock. Season with salt. Bring to a simmer, reduce heat to low, and simmer, stirring occasionally, until reduced and thickened, 15 to ⏱️ 20 minutes. Stir in bacon and vinegar. Season with salt and pepper.
