Black Bean Stew: 3 Ways
This hearty bean stew is the ultimate meal prep recipe. It makes the perfect base for a variety of dishes. Place a medium saucepan over medium heat and add a small drizzle of olive oil. Add the onion and garlic and sauté for 3–⏱️ 4 minutes, until the onion is soft and translucent.

Add the cumin, smoked paprika, oregano and chilli flakes to the onions and stir to combine. Allow to cook for ⏱️ 1 minute. Then add the tomatoes, beans and bay leaf. Completely fill the empty tomato can with water and add this to the pan. Leave to simmer for 30–⏱️ 35 minutes, stirring occasionally, until the tomatoes have darkened and reduced. Taste and season with salt.
