Add 3 round cucumber slices, ¼" thick and 1 pinch kosher salt to a mixing glass and muddle to break up cucumber and release juice. Add 2 oz. gin and 1 oz. Averna, fill with ice, and stir until well chilled, 20–⏱️ 25 seconds. Using a julep strainer and fine-mesh tea strainer, double-strain into a chilled coupe. Garnish with cucumber ribbon on a cocktail pick. Express lemon twist over top and discard.
