Combine 1 oz. fresh pineapple juice,1 oz. Amontillado sherry, 1 oz. rye whiskey, ¾ oz. fresh lemon juice, ¾ oz. simple syrup, and 1 dash Angostura bitters in a cocktail shaker and fill with ice. Cover and shake until well chilled, about ⏱️ 7 seconds.

Pour 1 oz. chilled club soda into an ice-filled Collins or highball glass and strain cocktail into it. Garnish with lemon wheel.
