Bircher Muesli Loaf
We’ve had lots of our bircher muesli in the kitchen recently, so we started playing around with other ways to use it and this was our favourite discovery. It's sweet and spongy with subtle hints of banana. Our Bircher Muesli that we use to make this recipe has dried apple and raspberry pieces in, which add such great flavour.

📝 Preparation Steps

Preheat the oven to 180C (350F), fan setting. Line a loaf tin with baking parchment.

Peel the bananas and place into a large bowl. Mash well with a fork until you get a creamy texture.

Once the bananas are creamy, add the rest of the ingredients and mix really well until a batter forms.

Pour the mixture into a lined loaf tin and bake in the oven for ⏱️ 40-45 minutes until risen and golden.
