Berry Celebration Cake
This berry celebration cake is a real show-stopper, with four layers of delicious vanilla sponge, filled with homemade strawberry chia jam and topped with creamy cashew icing. We love to make it for birthdays or special occasions - it always goes down as a big hit.

Preheat the oven to 180C (350F), fan setting. Line four 23cm cake tins with baking parchment - if you don't have four cake tins, you can use two and repeat the process.

In a large bowl, mix together the flour, ground almonds, bicarb, baking powder, vanilla powder and coconut sugar, stirring well to remove any lumps.

Once combined, add the almond milk, apple cider vinegar and rapeseed oil, and stir again until a batter has formed.

Divide the batter equally between four tins (or two and leave half of the mixture in the bowl) and bake in the oven for 30–⏱️ 35 minutes until well risen and a knife inserted in the centre comes out clean. If not return the tins to the oven to bake for a further ⏱️ 5 minutes.

Once cooked, remove and leave the cakes to cool in their tins until they reach room temperature, about ⏱️ 30 minutes. If you are using two tins, remove the cakes from the tins once cool and repeat the process.

Make the icing by draining the cashews and placing in a powerful food processor with the rest of the icing ingredients. Pulse the mixer until the mixture becomes smooth – it should hold its shape but be thin enough to smooth over a cake, you can add another splash of almond milk if it becomes too thick.

Make the jam by placing the strawberries, chia seeds and maple syrup into a small pan over a medium-low heat and cook until the strawberries are soft, about ⏱️ 10 minutes. Once soft, mash the berries using a fork, until the mixture comes together but is still a little chunky. Cook for 10 more minutes before removing from the heat and leaving to cool.

Once the cakes are cool and you have your jam and icing, you are ready to assemble. Place one slice of cake on a serving plate, spoon over some strawberry jam, spreading it out to cover the whole surface, then place another cake on top. Repeat this process with the other cake slices and jam, until you place the last cake slice on top.

Spoon the cashew icing over the top cake slice and smooth it around evenly. Finish the cake by sprinkling over some fresh strawberries and raspberries.
