Berry and Goat Cheese Crostini

Pre-heat the oven to 350°F.

Slice the baguette on the bias into ½-inch slices. Brush each slice with olive oil. Season with a little salt and place the bread slices in a single layer on a sheet pan. Transfer the sheet pan to the oven and bake for 7 to ⏱️ 10 minutes, until lightly browned and toasted. (Or Air-fry the crostini at 330°F for ⏱️ 6 minutes.)

Using a food processor or electric hand mixer, whip the goat cheese and honey together until smooth. Add the chopped mint and pulse a few more times to combine.

Combine the diced strawberries with the balsamic glaze in a small bowl. In a second bowl, toss the blueberries with the jam to coat well.

Assemble the crostini by spreading a tablespoon of the whipped goat cheese on each crostini. Top the goat cheese with a small spoonful of the strawberries on one end and a small spoonful of the blueberries on the other end, leaving some of the white goat cheese visible in the middle. Garnish with fresh mint leaves.
