Beetroot Carpaccio
We made this for an event, and it tasted just as amazing as it looked. We love to use a variety of different coloured beetroot in this recipe, which look absolutely beautiful sprinkled with the green capers and finished with a touch of cashew cream.

📝 Preparation Steps

Place a pan of salt water over medium heat. Peel the beetroot.

Once the water is simmering, add the beetroot and cook for 35–⏱️ 40 minutes until soft. Drain and leave to one side to cool.

Once cool, slice into really thin pieces using a knife or mandoline.

Place the dressing ingredients into a large bowl and mix together. Add the beetroot and leave to marinate for ⏱️ 1 hour.

When ready to serve, lay the pieces of beetroot out over a serving dish.
