Beetroot Brownies
These beetroot brownies are a great combination of chocolatey, earthy and sweet. They're so simple to make and always go down so well. We'd recommend making a big batch and keeping a few in the fridge for snacking across the week.

Preheat oven to 180C (350F), fan setting.

Place the flour, cacao powder, beetroot powder, baking powder, coconut sugar and bicarb into a mixing bowl and whisk well to remove any lumps. Whisk the coconut milk and sunflower oil through until smooth.

Pour the mixture into a lined baking tray and cook for ⏱️ 30-35 minutes until cooked through but still a little fudgy.

Leave to cool a little before cutting into equal brownies.
