Pack dill sprigs, beets, eggs and onion into a quart-sized jar.

Heat vinegar, cup sugar, salt, black peppercorns, mustard seeds and 1⁄2 cup water in a saucepan to dissolve the sugar and salt.

Pour into the jar and let cool. Cover and chill at least 1 day and up to 4 days.
