Brown the beef
Ground beef, ~ 113gBeef bouillon paste, 2 g

Place a pan over medium high heat. Add in the ground beef and smash it with your hand or a spatula into an even layer. Add a sprinkle of salt on top & let the beef brown for several minutes. Once browned on the bottom, scrape it all up with a spatula and allow it to sear until cooked through. Add a sprinkle of zaβatar to the beef.

Prep the tomato salad

While the beef is browning, add the halved tomatoes to a bowl and toss with fresh dill, sumac, feta cheese and a bit of olive oil. Stir and set aside.

Finish the beef

Add the bouillon and water to the beef mixture to deglaze. Stir until evenly coated, scraping up any browned bits on the bottom of the pan.

Assemble the taco

Add a drizzle of olive oil to the tortillas & toast on a hot pan or griddle. Add a spoonful of hummus to the warmed tortillas. Next add a scoop of the beef followed by the tomato salad. Serve & devour!
