Heat a large pot of water to boil to cook the pasta. When the pasta is done cooking, drain it in a colander and set aside.

While the pasta cooks, heat one tablespoon of the oil over medium heat in a large skillet or saucepan.

Add the remaining tablespoon of oil to the skillet and then add the beef. Cook it on one side for ⏱️ 2-3 minutes, and then use tongs to flip the beef slices over to cook for an additional ⏱️ 1-2 minutes.

In a small bowl, combine the tamari, vinegar, maple syrup, ginger, cornstarch, and water. Stir or whisk to combine.

Add the vegetables back to the skillet with the beef. Pour in the sauce, reduce the heat to low, and let the mixture simmer for a few minutes to thicken.
