Marinate the beef: In a medium bowl combine the thinly sliced beef, soy sauce, baking soda and cornstarch. Allow the beef to marinate for ⏱️ 15-30 minutes while you prep the rest of the ingredients.

Cook the noodles: According to package instructions. I like to do a minute or two earlier so they don't get mushy. Drain the noodles then rinse in cold water and set aside.

Make the sauce: In a small bowl combine soy sauce, hoisin sauce, sesame oil, brown sugar and rice wine vinegar, set aside.

Heat 1 tbsp of oil in a large skillet or wok. Add steak and cook until browned and cooked through, ⏱️ 4-5 minutes. Transfer to a plate and set aside.

Add the remaining tbsp of oil to the same skillet then add in the mixed vegetables. Sauté for ⏱️ 3-4 minutes or until they start to get some color on them.Add in the garlic and ginger and cook for an additional minute.

Add the sauce to the pan along with the cooked steak and noodles.

Toss everything together and serve immediately with sesame seeds and green onions for garnish, if desired.
