Preheat oven to 350°F. Line a baking sheet with parchment paper. Fit a food processor with the metal blade. Pulse together flour, sugar, and salt just until combined, 2 to 3 times. Add lard and pulse until crumbly, about 10 times. Stir together milk and 6 tablespoons cold water in a measuring cup. With food processor running, slowly add milk mixture. Process until dough comes together, about ⏱️ 3 minutes. On a lightly floured work surface, shape dough into a smooth ball. Cover and let rest ⏱️ 10 minutes.

Roll dough out to 5/8-inch-thick. Cut out biscuits with a fluted 2 1/2-inch round cutter. Re-roll scraps and cut once more. Place biscuits on prepared baking sheet. Pierce biscuits 3 times with a fork. Bake until golden brown on the bottoms and slightly puffed, 30 to ⏱️ 35 minutes.

Cook ham in a large skillet over medium-high heat, turning once, until browned, 1 to ⏱️ 3 minutes. Slice biscuits in half and serve warm, filled with country ham and chow-chow.
