Heat the sugar and water in a pan over medium-high heat until it caramelizes and turns a dark brown before carefully adding the water and heating until the caramel dissolves and setting aside.

Heat the oil over medium-high heat, add the shallot and garlic and cook until the shallot is tender, about ⏱️ 1-2 minutes, before adding the pork, caramel sauce, fish sauce, lime juice and sriracha and cooking, about ⏱️ 3-5 minutes.

Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice of bread followed by the caramelized pork, pickled carrots and daikon, cucumber, jalapeno, cilantro, the remaining cheese and finally top with the remaining slice of bread with the buttered side up.
