Preheat oven to 400°F. Cook sugar, vanilla seeds, and salt in a large skillet over medium heat, stirring occasionally, until mixture is amber and a spatula leaves a trail, 4 to ⏱️ 6 minutes. Pour syrup into the bottom of a nonstick 9-inch pie plate; cool slightly. Arrange bananas cut-side down in a snug single layer on top of caramel, cutting to fit if necessary.

On a floured surface, roll 1/2 Basic Pie Dough recipe to an 11-inch circle. Place on top of bananas; tuck edges under and prick all over with the tip of a knife.
