Sift the flour into a large bowl; stir in the chia seeds and salt.

Make a well in the middle of the flour, then pour in the coconut oil, plant-based milk and maple syrup; gradually mix to form a smooth batter. Fold through the chocolate and set aside for ⏱️ 5 minutes to thicken.

Warm ½ teaspoon coconut oil in a large frying set over medium heat. Add 1–2 spoonfuls of batter and top with 4–5 slices of banana. Cook for 3–⏱️ 5 minutes, then flip and cook for another 3–⏱️ 5 minutes, until the banana is golden and caramelised. Repeat with the remaining mixture — you should be able to cook 3–4 pancakes at a time, depending on the size of your pan.

To serve, divide the pancakes between plates and drizzle over a little maple syrup (to taste). These pancakes are delicious as they are or served with coconut yoghurt and fresh berries.
