📝 Preparation Steps

Heat the oil in a large, nonstick saute pan over medium heat.

Remove the casings from the sausage and add to the pan. Crumble the meat and allow to brown for ⏱️ 5-7 minutes.

Next, add the sliced mushrooms and saute for ⏱️ 4-5 minutes until softened; then add the marinara sauce and red wine.

Reduce heat to low and simmer for ⏱️ 15 minutes.

Preheat oven to 350 degrees F.

Prepare pasta according to package directions; however, reduce cooking time by ⏱️ 3-4 minutes so that the pasta is al dente and not too soft. Drain.

Add the pasta back to the pot along with the sauce and 1 cup of the mozzarella cheese. Mix well.

Place the penne in an oven safe, 13x9 (3 qt) casserole dish, top with remaining cheese and bake for ⏱️ 25-30 minutes or until cheese is melted and bubbly.
