Baked Pear, Cinnamon & Walnut Porridge
This creamy pear, cinnamon & walnut porridge is the perfect winter breakfast. I love baking the pear in thin slices with a little maple and cinnamon, and then throwing in the walnuts at the end so that they go nice and crunchy.

Preheat the oven to 180°C / 160°C fan /350°F.

Halve the pear, remove the core and cut the pear into 2cm thick slices and place them on a baking tray with a tablespoon of the maple syrup and half a teaspoon of the cinnamon. Toss the slices in the maple and cinnamon and toss to coat evenly.

Bake for ⏱️ 15 minutes until golden, then remove from the oven, add the walnuts to the tray and bake for a further five minutes until the walnuts are darkened and fragrant.

While the pear is baking in the oven make the porridge: place the oats, milk, half a teaspoon of cinnamon and a tablespoon of maple syrup in a pan over a medium heat. Cook for ⏱️ 5-6 minutes, stirring frequently, until smooth, creamy and piping hot.

Once the pears are cooked, place them on top of the porridge with the chopped walnuts and enjoy.
