Baked Avocado With Sun-Dried Tomatoes & Pine Nuts
I make these baked avocados a lot for a quick weekday supper. The mix of sun-dried tomatoes with garlic, pine nuts and balsamic vinegar is just delicious! They're great served with a simple rocket salad, some sweet potato wedges in the evening, or as an addition to your usual brunch on the weekends.

Preheat the oven to 200°C / 180°C fan / 400°F

Cut the avocados length ways, scoop out the stone and some of the surrounding flesh on each half. Cut into small pieces.

Mix the chopped avocado with the sun-dried tomatoes, garlic, pine nuts, chilli flakes, balsamic vinegar and olive oil (we use the oil from the sun-dried tomato jar) and a sprinkle of salt and pepper.

Divide the mixture between the avocado halves, placing the mix in the scooped out part. I like to pile it quite high and then add another sprinkle of chilli flakes.

Place in the oven and bake for ⏱️ 10-12 minutes, before serving straight away in the skins.
