Preheat the oven to 375°F.

Cut the bacon strips in half crosswise. Wrap a piece of bacon around each water chestnut and secure with a toothpick. Place the water chestnuts in a 9-by-13-inch baking dish.

Bake until lightly golden and starting to crisp, 20 to ⏱️ 25 minutes. Remove the baking dish from the oven and drain off the grease by tilting the dish and spooning it out or dabbing the grease with a paper towel.

Meanwhile, in a medium bowl, whisk together the chili sauce, brown sugar, soy sauce, Worcestershire sauce, ground ginger, and garlic powder.

Pour the chili sauce mixture over the water chestnuts, spooning the sauce over any bare spots to make sure each is fully covered . Return the baking dish to the oven and continue to bake until the bacon is crispy and the sauce is deeply caramelized, 25 to ⏱️ 30 minutes more. Use a spoon to scoop out any pools of rendered bacon fat from the surface of the sauce.

Transfer the water chestnuts to a serving platter and serve any remaining sauce in a small bowl for dipping.
