Line a rimmed baking sheet with foil for easy cleanup. Soak toothpicks in water for at least ⏱️ 30 minutes prior to broiling or grilling.

To prepare the scallops, pat dry. Examine each one for a side muscle (the "beard"), a square-shaped bit of tissue that runs in the opposite direction as the rest of the muscle. Pull it off by pinching it and tearing it away from the scallop.

Line a rimmed baking sheet or plate with a clean kitchen towel. Arrange scallops in a single layer on towel, then cover with a second clean kitchen towel. Press down gently to blot liquid.

Let scallops rest at room temperature until towels have absorbed most of their moisture, about ⏱️ 10 minutes.

Line a microwave-safe plate with paper towels. Top with half the bacon (cut in half) and microwave on HIGH until bacon is mostly cooked through but still soft and pliable, about 3 to ⏱️ 4 minutes (do not overcook). Repeat with remaining bacon.

In a medium bowl, whisk together olive oil, lemon juice, garlic, paprika, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add scallops and toss to coat. Wrap 1 piece of bacon around each scallop and skewer with a toothpick.

Position a rack 3 to 4 inches from broiler and preheat on high. Broil, flipping scallops once, until the bacon is slightly crispy and scallops are cooked through, about 6 to ⏱️ 10 minutes. Garnish with more thyme and serve with lemon wedges if desired.
