Fill a large pot with water and add 2 pounds red potatoes,. Bring the water and potatoes to a rolling boil over high heat. Reduce the heat to medium-high and continue to boil for ⏱️ 12-15 minutes, or until fork-tender. Drain and rinse the potatoes under cold water.
