Preheat the oven to 350˚F. Generously spray a 12-cup muffin tin with cooking spray.

Cook the bacon in a medium skillet over medium heat, flipping occasionally, until browned and crispy, 5 to ⏱️ 7 minutes. Transfer to a paper towel–lined plate to cool, then crumble.

Puree the cottage cheese in a blender until smooth and creamy, about ⏱️ 1 minute. Add the eggs, salt, pepper and a dash or two of hot sauce, if using. Blend until smooth.

Mix together the pepper jack, green chiles, green onions and all but 1 tablespoon of the bacon in a medium bowl. Divide the mixture among the muffin cups (about 2 tablespoons each) and pour in the egg mixture. Sprinkle with the reserved bacon. Bake until the eggs are just set, 25 to ⏱️ 30 minutes. Let cool for ⏱️ 5 minutes, then remove the egg bites from the pan.
